A "provider" is a person who provides a service. Usually a provider is a prostitute, or a person whose primary business is selling sex as a service. In the massage parlor world, a masseuse may be called a provider if she provides sexual-related favors as part of her services, or if she works in an establishment known to be primarily a sexual service establishment. Provider is a derogatory term for a masseuse or bodyworker or other provider of softer sensual services; kinda like calling someone who is "loose" a hoar.
In the massage parlor world, a "hobbyist " is a customer. It seems to describe the kind of customer who enjoys visiting many massage places, seeking out the ladies who will provide special sexual services behind the closed door. There are communities of people who enjoy this form of hunt, and who share tips ands secrets among themselves. I guess you might call a hard core sensual massage customer a hobbyist, if he spends considerable time reading about it, talking about it, researching it, and of course participating.
The fact that frequenting illicit massage parlors is truly a hobby for many of these guys is not well understood in our society. The press and the public seem to think a massage parlor is a front for illegal sex trade. In fact, in the majority of cases, an illicit or under-the-radar massage parlor is actually more of a game room, providing adult entertainment in the form of a mental and physical game, challenge, or puzzle. The customer is enticed into a game of cat-and-mouse, a flirtatious hour during which he doesn't know what might be available, or whether or not he may offend the lady with his comments or advances. This is the topic of much other writing, and makes for some enjoyable conversations with my more intelligent (and charming) gentleman customers!
It is unfortunate that some owners run full fledged brothels under the cover of a massage business, but that is the exception (and usually those are the ones that get busted). Similarly, I have met many full-time "working girls" who interview at massage parlors thinking they are nothing more than brothels renting small private rooms for their illegal client encounters. At the good massage parlors, they are never hired.

Although I call myself a "hobbyist" because of the number of establishments I've patronized, the enjoyment I get from all kinds of massages, and the various sexual experiences I found there, I'm sorry to admit that I'm not as skilled at "poker" as the best players you mention, Missy.
I do enjoy a little mystery and dance, but fatigue from women's games is what drew me to MPs in the first place. So the testing of the ladies' boundaries and the "no that really means maybe" aren't my cup of tea.
But I haven't found those "adult entertainment" places you talk about in L.A. (they're probably too under the radar for me). Most places that aren't legit are very much of the "brothel" variety and, yeah, they do get closed often, unfortunately.
IME, the massage is a foreplay during which masseuse and customer get acquainted, and it ends with the "what do you want?" question. But personally, I prefer it when few words are said and sex flows naturally.
